This is a smoke I did last summer, but there are lots of new folks who may be interested in trying this. You can use any ground meat by itself or mix as I did. Hope you enjoy the pics.

Smoked Elk/Buffalo/Polish Sausage Meat Balls
I didn't know quite where to put this as this is some wild game, some not. Made these up this morning with About 2 pounds of ground buffalo, 1 1/2 pounds ground elk and 1 pound of my homemade bulk Polish sausage. Flattened out each ball and inserted a cube of Muenster cheese in each one, rolled in my special rub, wrapped in bacon then smoked at about 240 to an internal of 155. Poured my homemade BBQ sauce over and smoked to 160 degrees. Pretty darn good stuff!

Dammit, Bassman - we've known each other for what, two weeks? And today I find out you been holding back the buffler from me. Had you find out by you showing your balls to strangers on a new forum..

I ran out of buffler awhile back. I think the ranch got put out of business for importing wild pigs (plus they were diseased)! *&* *&* +^) +^) )@(
 
Holy Moink Balls Bassman! Those look fantastic. I have never thought of stuffing them with a hunk-O-cheese and then the bacon wrap puts them over the top. I'm making some of these without question!

I also have some prosciutto and cheese stuffed cherry peppers that I'm going to layer in sausage and bacon wrap. You have given me some great ideas with this post...thanks!
 
Dana, I would put a little more cheese in the next time. Believe it or not, one strip of bacon wrapped both sides of each meat ball. Once you wrap one, you'll see how easy it is. I'm about ready for some more myself. Thanks for the kudos, folks.
