When I was home brewing beer, there was a saying...Don't worry, relax and have a home brew! It worked in all kinds of situations, and the real meaning was that in making the brew, don't get worked up about about it, because it's gonna turn out OK! I find that Sourdough is about the same way.

I got some of Keith's sourdough through an exchange, and have gotten it rehydrated and have been keeping it fed and fairly active. I set out to make some bread today, and here is how it turned out.

I'm learning some of the terms...and there is good reason that this is called the sponge.

While it raised I did some work around the house. Here is a pic of the beautiful sky and my purple martins flying around. There are a bunch of them here now...there are 12 in this picture.

I decided on 2 french loaves and a regular loaf.

Man were these good! The trouble is, I need to cut the recipe in half. I gave away some to my neighbors...needless to say they love me!

It was awesome. I can't wait to make some sourdough pancakes too! Thanks Keith and Tracey for putting up with my rookie questions. I think I am on my way!
 
I'll just keep following you around so I can give you *p1*. That's as pretty a loaf of sourdough as I've ever seen. If you don't mind my asking, what recipe did you use? I like the texture and crust on yours.
 
Hey Keith,

I started using your recipe...however, I quickly diverted when I was (being a dumb a$$) just assembling the ingredients and adding them into the Kitchen Aid mixer bowl. I didn't have any powdered milk...so instead of water and rehydrating the powdered milk, I used skim milk. Also, as I was just going down the list putting ingredients in the bowl (and not reading the recipe)...you know that egg that is used for an egg wash at the end? Yup, you guessed it, that went into the bowl and the dough too...oops! I didn't freak out about it, I've made doughs that had an egg in them before so I just went for it.

And I will definitely not half the recipe...if I'm making bread, I'm going to make as much as I can and my friends / neighbors will be the recipient of my home baked goodness.

The Bread turned out fantastic...thanks again!

I must confess that for years, I broke a couple of eggs into my dough. Just this last batch I made was it omitted. Once I left the egg out, it seemed to tighten up the loaf somewhat, but it's still moist and tender. In fact, I just took a loaf out of the freezer today to have some with lasagna and it is just like the day I froze it.
