Finally had a chance to do some sausage this weekend. Beer-B-Q and Checkered Past sent me some samples and I had the pleasure of trying them out. Guys thanks for the seasoning. This is not a thread comparing them side by side, simply enjoying them both at the same time. I picked up a 10lb Butt and split it in two 5lb batches. First of all, I'm not a big fennel fan but I have to say both after grilling only had a subtle hint of fennel. Thanks for checking out my sausage...
All chopped up. I always add a fair amount of extra fat. Just because "Fat is flavor"...

The fry test. If you're new to sausage making the fry test is the best way to make sure the spices are to your liking.
Your only chance to adjust the mix before stuffing...

Just put on the flat grill...
I split my grill up. Half coals and half indirect. I like to render some of the fat out slow and then put them on the heat and off again until done...
Ready to come off. Guys they were great. CP's had a little more heat than Beer-B-Q's but both were a very good mix.
