CANNED EGGS

These er great fer a quick mornin breakefest. More like a scrambled
egg. I added some cooked sausage ta mine. The reason I cooked the
sausage first was so it weren't so greasy. Don't like my eggs soggy!

3 extra large eggs

dash a seasonin a yer choice

1/4 cup a cooked pork sausage

Put the sausage in yer pint jar, mix up yer eggs real well with the
seasonin an a touch a water. Pour yer eggs inta the jars over the
sausage.

I process mine at 10 pounds a pressure (use what be right fer yalls altitude) fer 40 minutes.

Here be the disclaimer: This ain't approved by the food gods, so try
it at yalls own risk. Ifin yall keep thins good an clean there should
be very little danger from this, but, yer on yalls own if ya try it.
The feller I got this from says hes kept em two years on the shelf.
