Chorizo ABT's To have some appetizers, I quickly made up some ABT's.
Took some homemade chorizo that I made last month and fried it up.
To this, I added softened cream cheese, finely chopped green onion and some mild cheddar. I added all this to a quart size ziploc bag, snipped the corner end off, hole about 3/8", and used it like a bakers cake thingymajig. Sqeezed the mixture into the jalapeno's. Worked very well.
To each on, I added several squirts of Holy Jolkia (ghost chile) hot sauce.
Precooked the bacon first to the point where it just started to curl on the edges then wrapped them. Into the smoker for a few hours. Came out nice and crispy. I think maybe precooking the bacon helped a bit as normally when I do these, the bacon is still a bit soft.
Not much for pics on this one here, nor my other posts this week. Just broke out the smoker and have to get back into the groove of things.
But I promise, my future smokes will be more visual.
