Mad Hunky pork sausage !!!!!!!

Well no pics yet(we will stuff tomorrow). But I must say Mad Hunky Rub is the bomb when it comes to sausage seasoning. I used a recipe from another person for my base and went from there. I also made Linguaza from Rytek’s book and also some more andouille from the book as well. I’ll tell ya what I really like is this Linguaza recipe. I of course added some peppers for some zip but other then that followed the recipe pretty close. It is my kids favorite and my second after the hunky. They also had a hard time deciding if it was better then the hunk sausage. Here is the recipe I used for the Mad Hunky sasauge.

7lbs total
6lbs pork butt
1lb beef
1.5 table spoons of Hunky rub
1.25 table spoons of kosher salt
.75 table spoons of pure cane sugar
.5 cup cold water
1 small onion diced
3-4 dashes of crushed red peppers

YOU GOTTA TRY THIS!!!!!!!

LOL...ya we have been cold for this summer. It is suppose to start getting warm pretty soon I believe. better then arizona where my wife is, they are well over a hundred now a days

Sounds good; Have the same book but no stuffer or grinder yet to test it out. Oh well at least I can watch yours for inspiration. :)
 
No need bud...just have the butcher department grind the butt while you shop...then just put in to bags like fresh sausage that you get in 1 lb chubs.

That will work as well. Time for an experiment or 2 I think...
 
It really works well...I started out by just ordering bags from butcher-packer for the sausage when I was done mixing. Then just had the butcher at the local grocery store grind up my butts and then took it home mixed up what ever fresh sausage I wanted to try and stuffed it right into the bags by hand. good luck drifter I hope ya try it.

Man Jerod those look great. I need to mix up some of the Linguaza to try. I have my stuffer just never used it, seems the sausage never lasts long enough to put into casings. I guess I need to make larger batches. LOL

thanks all here are some pics of the linguaza after a quick 1 hour smoke in the smoker at high temps. It sorta went to far but it was still great
