These go great with a nice spicy smoked rib or chicken. I smoked some ribs when I first got the smoker and used my home canned Korean BBQ sauce to marinade them with before smoking. I brushed on a little of the sauce when they were done and served them with these beans and some fried rice. They were great.
Szechuan Beans
8 oz green beans or Chinese long beans
1 tsp minced onion
1 tsp minced green onion
1/2 tsp minced garlic
1/2 tsp minced ginger
1/2 tsp minced jalapeno pepper
1/2 tsp minced cilantro
1 Tbsp oyster sauce
1 Tbsp soy sauce
1/2 tsp Vietnamese hot sauce (sambal)
pinch of sugar
Blanch beans in water or oil. Mix soy sauce, oyster sauce and sambal
together set aside.
In a wok with a little vegetable oil, fry onions, garlic, ginger,
jalapeno, and cilantro just until fragrant, about 1 minute.
Add green beans and continue frying, add oyster sauce mixture and sugar.
Toss together and fry until beans are crisp tender.
